11. Preheat oven to 350° F. Sift all dry ingredients together in a large mixing bowl. Mix wet ingredients with dry ingredients until well combined. Place in muffin or individual loaf tin.

22. Bake for 35 minutes or until the muffin slightly pulls away from the edges. If using a large or full loaf pan, bake for 50 minutes.

33. If you prefer a little more of a sweet kick, top with a lightly sweetened cream cheese icing or a dollop of whipped cream.

½ cup Zoye Premium Vegetable Oil

½ cup milk

½ cup shredded zucchini squash

¾ of a large avocado, mashed

2 eggs

½ cups nuts, optional
