11. In a 6-quart soup pot, heat Zoye Low Saturated Fat Premium Vegetable Oil Premium Vegetable Oil over medium heat. Sprinkle salt over chicken and cook 20 minutes, until browned on each side, turning halfway through cooking.

22. Add onion and sauté about 2 minutes; drain off excess liquid. Add remaining ingredients to chicken; mix well. Bring to a boil, then reduce heat to low and simmer 20 minutes, or until chicken is tender and cooked through.

3Notes: You can use any type of white bean here in place of the cannellini beans... you know, pinto beans, garbanzo beans (chick peas) or black-eyed peas. This dish comes together in minutes. Serve it with grilled potatoes and a tossed salad on the side.

8 chicken thighs or drumsticks (about 2 lbs.)

1 onion, chopped

2 (14 to 16-ounce) cans cannellini beans (white kidney beans)

2 (15-ounce) cans whole potatoes, drained

1 (28-ounce) can whole tomatoes, chopped, juice reserved

2 Tbsp. tomato paste

1 Tbsp. dried tarragon

2 tsp. garlic powder

¼ tsp. crushed red pepper
