11. Place 2 quarts vanilla ice cream out on counter to soften.

22. While ice cream is softening: In large bowl, mix together cereal, almonds, brown sugar, Zoye Low Saturated Fat Premium Vegetable Oil Premium Vegetable Oil , butter, potato chips, vanilla, and mint.

33. Press half of mixture into bottom of 13x9x2 inch baking dish and chill.

44. Remove and spoon softened ice cream over chilled crust mixture. Using wax paper, press down evenly. Top the remaining mixture of crumbs. Cover and freeze for at least 2 hours.

55. To serve: cut into 8 equal squares. Then cut the squares in half. Serve as is, or finely chop your favorite fruit or chocolate chips and sprinkle on top.

1 cup crushed potato chips

1 cup slivered almonds

1 cup brown sugar

⅓ cup butter

1 tsp. mint

1 Tbsp. vanilla

2 quarts vanilla ice cream
