11. Preheat oven to 350° F; grease and flour 2 loaf pans. In large mixer bowl, beat eggs until foamy. Add sugar, Zoye Low Saturated Fat Premium Vegetable Oil Premium Vegetable Oil, vanilla, and zucchini; beat well. Add nuts, flour, and remaining ingredients.
22. Bake 1 hour or until toothpick comes out clean. Cool 15 minutes and then turn out of pans.

1 Tbsp. vanilla
2 cups grated zucchini
1 cup chopped walnuts (optional)
2 cups flour
1 Tbsp. pumpkin pie spice
1 tsp. salt
2 tsp. baking soda
½ tsp. baking powder
