1Preheat oven to 450° F. Coat a 10-inch cast iron skillet or 8-inch square baking dish with nonstick cooking spray.
2In a large bowl, combine all ingredients; mix well then pour batter into prepared baking pan.
3Bake 30 to 35 minutes, or until golden and a wooden toothpick inserted in center comes out clean. Cut and serve warm, or allow to cool before serving.
4Notes: If you have a large cast-iron skillet and would like to make crispy corn bread, place ⅓ cup Zoye Low Saturated Fat Premium Vegetable Oil Premium Vegetable Oil in the skillet and heat in the 450° F oven until hot. Remove from oven and pour batter over hot oil. Return skillet to oven and bake as above.
