Every time I make this recipe, I receive compliments, and requests for the recipe. Whenever  I try a similar dish at potlucks, it never tastes as good as this recipe.

Zoye Healthier 7-Layer Salad

Directions

1Chop and layer vegetables in order given in a 9 x 12 dish. For a bit stronger flavor, you can use an 11 x 7 dish. Cover the bottom of the dish with the lettuce, and then sprinkle with remaining vegetables, so they are scattered about the dish, but not as thick as the lettuce.

2Sprinkle vegetables with the dry dressing mix. In a small bowl, combine yogurt and mayo; carefully spread this over vegetables. It is almost like you are frosting a cake, so you need to be very careful. It may look like there is not enough dressing to cover the ingredients because it will not be 100% frosted; there will be some bare spots. Trust me, the flavor will be perfect!

3Sprinkle with the shredded cheese and then the turkey bacon bits. Place in fridge a few hours to blend the flavors. This can be prepared up to 24-hours ahead of time, although it gets soggy after a day or two. Leftovers are still good a few days later, although they may be a bit soggy.

4When ready to serve, use a sharp or firm edged small metal spatula to cut down into the dish as if cutting into cake pieces, and then use the spatula for serving.

Ingredients

Lettuce, chopped (I use romaine)

Sweet or red onion, chopped

Green pepper, chopped

Celery, chopped

1 C thawed frozen peas

½ package dry ranch or Italian dressing (or, I have a homemade dry ranch recipe mix I sometimes use)

½ C nonfat yogurt

½ C vegetable oil or avocado mayo (I use Kraft because it has less fat than Hellman's)

1 C Shredded low fat cheddar cheese

8 to 10 slices turkey bacon, cooked and cut into bits
