1In a skillet, heat two tablespoons of Zoye Low Saturated Fat Premium Vegetable Oil Premium Vegetable Oil over medium heat; stir fry the veggies. Sauté over high heat for two minutes. Add broth; let simmer until veggies are limp. Mix soy sauce with cooked chicken in a bowl. Add chicken to veggie mixture in skillet; stir occasionally until everything is combined well. Remove from heat; cool for 15 minutes. Mixture should be moist, not wet.
2Place 2-3 tablespoons of filling mixture about two inches from corner of one egg roll wrapper. Moisten opposite sides of wrapper. Fold the corner closest to the filling in tightly. Fold in each side and finish rolling. Seal the moistened edges. Using a skillet, heat the remaining two tablespoons of Zoye Low Saturated Fat Premium Vegetable Oil Premium Vegetable Oil over medium-high heat. Brown egg rolls on all sides until golden brown. Serve plain or with a sauce of choice.
